Chicken Salad Crossaints

If you craving a lunch to die for try this... it's very light but satisfying!

ingredients
1 cup Mayo
2 T Lemon Juice
2 Cans Chicken
1 T Milk
1 Package Uncle Bens 90 Minute Wild Rice
TidBit Soy Sauce


ADD TO YOUR HEARTS DESIRE:
Grapes
Almonds
Green Onions


Mix together and serve on a soft crossaint!

Texas Roadhouse Sweet Yeast Rolls & Butter

Texas Roadhouse® Sweet Yeast Rolls & Butter
Rolls
½ solid cake of yeast or 1 package of active dry yeast
½ c. warm water
2 c. milk
½ c. sugar
2 quarts all purpose flour
2 tbsp melted butter
2 whole eggs
2 tsp salt

Soften yeast in warm water with a teaspoon of sugar. Scald milk, cool to lukewarm. Add yeast, sugar and enough flour to make medium batter. Beat thoroughly. Let stand until light and foamy. Add melted butter (which has been cooled), eggs, and salt. Beat well. Add enough flour to form soft dough. Sprinkle small amount of flour on counter and let dough rest.
Meanwhile, clean and dry bowl; grease clean surface of bowl. Knead dough until smooth and satiny. Put in greased bowl; turn over to grease top. Cover, let rise in warm place until double in bulk. Punch down. Turn out on floured board. Divide into portions for shaping; let rest 10 minutes. Shape dough into desired forms. Please on greased baking sheets. Let rise until doubled.
Bake at 375 degrees for 10 minutes; reduce temperature to 350 degrees for 10-15 minutes more. Cool on rack. Makes 5 to 6 dozen.

Butter
½ c. butter
½ c. powdered sugar
½c. honey
1 tsp cinnamon

Blend all ingredients at room temperature

Twisted GOODNESS!

So a lady in my ward gave me a breadstick the other day. and it was the most tastiest breadstick that has ever touched my lips. i had to savor every inch of that breadstick and after i finished i NEEDED more. so i immediately texted her and got the recipe...
i haven't had a chance to try it out yet but here it is so you can make it and invite me over to eat them! :)

CARRIE STARR'S EASY BREADSTICKS

1 ½ TB YEAST
1 ½ CP WARM WATER
2 TB SUGAR
1 TSP SALT
3 ¼ CP FLOUR


LET RAISE 30 MINUTES. ROLL OUT INTO RECTANGLE. MELT 1 STICK BUTTER. SPREAD SOME OVER THE TOP-POUR THE REST INTO BAKING PAN. SEASON BREAD STICKS HOW YOU WANT. (I USE GARLIC SALT AND PARMESAN CHEESE) FOLD IN HALF LONG WAY. CUT BREAD STICKS THE SHORT WAY. TWIST THE BREAD AND PUT INTO 9 X 13 PAN ROLLING IN BUTTER. I SEASON THE TOP OF THE BREAD STICKS AS WELL WITH PARMESAN CHEESE. DARK PAN WILL BROWN THE BOTTOMS BETTER IF YOU LIKE BREADSTICKS WITH A CRUNCH. YOU CAN ALSO DO CINNAMON AND SUGAR TO HAVE A SWEET TREAT!


BAKE 375 FOR 20 MINUTES

Zucchini Bread

Ingredients:
3 cups flour                                 1 cup veggie oil
1 t salt                                         2 1/4 cups sugar
1 t baking soda                            3 t vanilla
1 t baking powder                       2 cups grated zucchini
3 t ground cinnamon                    1 cup chopped walnuts
3 eggs                                         1+ cup chocolate chips

Directions:
Grease and flour two 8 x 4 inch pans. Preheat oven to 325 degrees.
Mix flour, baking soda, baking powder, and cinnamon together.
Beat eggs, oil, vanilla, and sugar together in a large bowl.
Add dry ingredients and mix it well.
Mix in zucchini, nuts, and chocolate chips until well combined.
Pour batter into prepared pans.
Bake for 40-60 minutes (or until toothpick comes out clean)
Let cool for 20+ minutes.

Navajo Tacos

1) Defrost some Rhodes Rolls
2) Roll them out
3) Get a pan full of hot oil
4) Put the dough in the oil
(cook it until it's brown on both sides)
5) Get toppings!
We like refried beans, hamburger, cheese, olives, salad, avacado, and ranch!

Cheesy Rice and Chicken Casserole

This is my all time favorite dish to cook...
it is super easy and really delicious :)
All you need is:
1 can of cream of chicken soup
rice
cheese
chicken
seasonings

All you do is:
in a pyrex dish cover the bottom with rice.
(i usually do about 2-3 cups)
mix 1 can of cream of chicken soup with 3 cans of water
mix in your favorite seasonings and som shredded cheese!
mix the soup mixutre with the rice: 
Put your raw chicken on top and season that as well 
Bake in the oven for a little over an hour at 350*
(until rice is soft - add more water if needed)

Is Your Family Prepared?




Last week I was able to attend a great ward fireside for family emergency preparedness. (Mom and Gary attended and can add to this post if I have left anything out.)




Before attending the meeting my thoughts and feelings of being prepared as a family were scattered in confusion. Thankfully, after attending, I feel more confident in the things I need to do to help my family be prepared in the last days. I thought it would be a great topic to share and pass along any information gathered to immediate and extended family as well as friends.




First Aid - How many first aid kits do you have? If so what is in them? Are they missing anything. Brother Stephen (don't recall his last name) discussed some of the different first aid kits he has. He had a primary family first aid kit that was kept at home and also an on the go one.




Food Storage - The Lord has given revelation to our past and present prophets that we need to at least have a ONE YEAR storage supply for our family. There is so much information out there on what you can buy. DON'T FORGET WATER! Gary gave a great lesson on proper water storage and how to clean water as well. Canning is also great to help preserve fruits, vegetables and even MEAT!




Cooking - Dutch ovens and camping stoves.




Meeting Place - In the event of a disaster, where is your family meeting?

Strawberry (freezer) Jam

All you need to make delicious homemade strawberry jam!
Wash, de-stem, and cut strawberries and place them in a cake pan.
Mash the strawberries until it is your desired consistancy.
 Follow the directions on the sure*jell box
 Scoop the mixture into jars and let them sit for 24 hours.
Then put it in the freezer until your ready to use it!
simple, quick, and delicious!

May Makeover

So some... well millions of people choose January first for their new year's resolutions. After one or two months, many of the resolutions have already diminished or broken apart. I am trying something different - Makeover May! Men maybe growing out their moustaches for the month, but I have deceided that women should have something fun to do this month as well.

My Makeover May will not only to improve my physical self, but to also improve my mental and spiritual self as well. I figure that by publically publishing my ideas and thoughts I will have more will power to follow thru as well as 5 other sisters to help hold me to my goals.

My Goals:

  • Start loosing some of that extra "hubba bubba" (Physical)
Now that the sun is coming up earlier, I WILL get up at 6 AM every morning and for this first week, run one lap around the park by my house (just a little over one mile). I have found in years of my up and down weight, that cardio, specifically running, has helped the most. Also, not only does it work me physically, but it also gives me the time with myself and my thoughts. Eating healthier will also help in my success. Now that I will be working from home, I should have the time to find new healthy recipes for home cooked meals. It is so easy to be lazy and go pick up some fast food for the family. Even Tayvin's doctor said that he needs to eat better - more milk, less dougnuts and more veggies.

  • Learn something that is GOOD and valuable (Mental)
I figure my brain needs some stimulating as well. Tlyncia knows that I had quite some dust that was knocked off with the Moron Test app. There are so many new good and bad things to learn in the world today. With all of the recent disasters and bad news of how the world is taking a turn, our time will soon come. Will I be prepared? I have decided that at least one day of the week I am going to learn something that will help myself and my family. Examples are canning and food preparation, learning to tie knots, how to start a fire without matches, how to kill an elk, CPR, etc. They sky is the limit - well at least until I learn to fly a plane.
  • Feed and brighten my soul (Spiritual)
My soul has been dried out and shrivilled up. I CAN AND ALWAYS NEED DO BETTER! I haven't been the best at going to church every Sunday, reading my scriptures or even praying as oft as I should. I WILL read my scriptures/conference talks every day. I have a new fresh notebook that I have taken my conference notes, church notes and now scripture notes in. I have bought Alberto ,Eleki and myself new scriptures - Awsome right?! But what good was the purchase if we are not reading them? I am pretty good at saying my prayers at night, but I need to remember in the morning and also family prayer. NO MORE SOCCER on SUNDAYS! It was fun, but not the right thing to do. I realize that working a FT and PT job every weekday is hard and takes away from valuable family time. My Sundays will now be commited to God first and then my family. Life is too short for me to miss out precious moments with my family. I WILL go to church every Sunday and am going to do my best to take Tayvin along with me. Now that Grandma aka Mom, is Tayin's primary teacher, it should be exciting and something he will look forward to.

These are some of my thoughts that I have had over the past few weeks and they are now ready to be executed. I challenge you all to post your May Makeover goals! I am here for support. I can check in with you and help makesure you are successful.

Physical - I ate healthy. I had a sweet tooth and was going to make some cookies, instead Tayvin gave me a yogurt - my craving is gone.

Spiritual- I went to church and learned some awesome things in classes. I also am almost through watching the entire session of Saturday's April 2011 conference - Yes, I was bad and did watch any period! Before I go to bed, I WILL read at least 15 minutes of scriptures and say my prayers with Tayvin and Alberto, if he would like to join.

strawberry pie

Ingredients:
Graham Cracker Crust
Fresh Cut Strawberries
Danish Dessert
 How To:
Mix 1 3/4 cup of cold water and danish dessert
Boil for 1 minute on stove top (stirring constantly)
Mix "GOOP" with cut strawberries
Pour into graham cracker crust
Chill for 2-3 hours

CEVICHE!

Yummy Ceviche!!!

(Feeds about 6-8 ppl)


Ingredients:


3 pounds medium uncooked Shrimp (deveined)

1 large Purple Onion

large bundle of Cilantro

5 large Limes

Garlic Salt
Chili Powder

5-6 large Roma Tomatoes

1 large Cucumber

Tostadas

Valentina Chile Sauce (optional)

Avacado (optional)

2 Jalepenos (optional)


Let get cookin! First place all of the raw (grey color) shrimp in a large pot and boil in water until shrimp turns pink. In the meantime you have tons of dicing to do. Unfortunately my slap chop busted, so yes, I had to spend every second of this chopping everything with the good ol cutting board and knife. I HIGHLY recommend that you use a chopper if you have one.


In a large bowl I squeeze all of the limes and putin about a tablespoon of garlic salt and a teaspoon of chili pepper (in the end you can add more to taste). Next I dice up all of the tomatoes and dump them in the bowl. You may have to hand dice the tomatoes however, because the skins can be too tough for the chopper blade to cut through. Next the horrid purple onion! This onion is stronger than your typical white and yellow onion. You have been warned! When I chop up the onion I usually do it next to the sink where I can open up the window, run cold water and stick a piece of bread in my mouth. The old Mexican wives' tale is, if you cry when cutting the onion, you must me jealous of someone. Next chop up the cilantro and toss in the bowl. Peel and chop up the cucumber. Fold all of the ingredients together. If you like avacado and jalepenos (the more seeds added, the spicier), now would be the time to dice them up and add them to the medley.


Your shrimp should be done... if not did you even turn on the stove?! This next part sorta is tedious and annoying, so grab your ipod and headphones - you're going to be here for a bit.


Before you ask, "Why didn't you just buy the precooked shrimp that is already peeled and ready to eat, Toinnett?" I am going to tell you why... not only do I like doing things the hard way, but it TASTES WAAAAAY BETTER! It has a fresher taste.


Drain out the hot water and refill the pot with cold water. You will now need to peel all of the shrimp. Once all peeled I chop each shrimp into 3 pieces. Once they are all peeled and chopped, add to the mixture. Taste and add more garlic salt if needed.


Serve the ceviche on top of tostadas and enjoy!!!


P.S. A great Mexican beverage to go with this is Sangria Senorial found in the Mexican isle of your local grocery store.
